    I hope that I will continue to be mindful after this challenge is over. I have been combining mindfulness and meditation with my gratitude time outdoors, and I think this has been a great way to both appreciate the environment and to take time for myself to feel centered and thoughtful.

    I am working hard on keeping up with my sustainability actions. I have learned that doing sustainable behavior can be a lot easier than I assumed, like not using straws or single-use plastics. I hope i can continue a lot of these activities after the ecochallenge ends!

    Today I spent time outside walking around with friends and enjoying the sunshine. Mindfulness feels more achievable when you are out in nature on a beautiful day.

    I have been spending more time outside, and the fact that all of the tulips and daffodils have started to bloom allows me to be more mindful when I'm outdoors.

    How does food sovereignty address the complex transition from localized food systems to modern global food systems?

    Food sovereignty allows local communities to determine, grow, produce, buy, and consume their own definitions for culturally appropriate and healthy food. Communities are often in food deserts because they are not prioritized in distribution chains or by large grocery and restaurant chains. This results in communities having little to no access to culturally appropriate foods or to healthy foods, like fruits and vegetables. Food sovereignty offers food freedom to local communities and creates food justice.

    I joined this challenge so that I could find more places in my life to practice sustainable behavior, both in terms of the environment and in terms of mental and physical wellbeing. I chose actions in areas that I need to work on or that I feel I should be more conscious of, like spending time outdoors, practicing gratitude and mindfulness, and not using single use plastics.

    I am really enjoying the ecochallenge and it’s been nice to spend more time outside and be mindful about my time outdoors

    Spending more time outdoors causes you to pay more attention to the natural systems and processes around you. It can cause you to make more connections and think of things in a new way.

    (In no particular order)
    1. Radical empathy for all- recognizing that everyone is human, people experience things differently, and everyone deserves empathy 
    2. Gratitude and appreciation
    3. Equity and justice- everyone should have access to the same opportunities, and these should be made accessible to disadvantaged persons through accommodations, community resources, etc... Those who are at a disadvantage and are unable to receive the same economic, social, judicial, etc... resources must be provided working means to obtain them at the same level others can do so.
